Pink Lemonade Icebox Pie

I know that it's still cold in some parts of the world, but here in Texas things are heating up. Yesterday the temperatures were close to 90. Summer is comin' y'all. 



There is nothing quite like a cool refreshing treat on a hot summer's day and this pie fits the bill. It's easy to make and with simple ingredients it's a no brainer. I first saw the recipe here but I've changed it up just a bit. 

To me this delicious pie tastes just like a cherry limeade which just so happens to be my favorite drink! It's a tad bit tart and just sweet enough. My daughter, who is picky about sweets and rarely finishes any kind of treat (wish I had that problem) devoured an entire slice. 

Here's What You'll Need:


The original recipe instructs you to make your own graham cracker crust. I didn't do this because I happened to have a store bought crust on hand already. However, I would recommend that you make your own because in my opinion, the store bought crust was not up to par. 

Here's What You'll Do:

This is seriously the easiest pie you'll ever make!

Let the ingredients sit on the counter for a bit; the ice cream needs to be soft and the juice concentrate and the whipped topping should be thawed. Mix all three ingredients into a large bowl. 










Once the filling is well blended, pour into pie crust. 

Note: I had enough filling for two pies. I put the extra filling in a jar and stuck it in the freezer for next time.


I added a little garnish of sugared lemon. 


Now, just pop it in the freezer for about 4 hours or until the pie is firm. 

 That's it! 

 Time to eat!

  2. I make this alot but i have never used the ice cream. just the lemonade, whip cream and condensed milk. Will have to try this one...
