Helloooo Friday! All I can say is thank goodness we made it through this week! That is reason enough to celebrate for me!
Oh, another reason to celebrate? Today is National Peanut Butter Lovers Day. It's true, look it up. I don't know about y'all, but I love me some peanut butter!
So, to get y'all started off on the right foot I thought I'd share with y'all this recipe for my yummy Peanut Butter Oatmeal Cookies!
Looks good right? Last week I was craving oatmeal cookies something fierce and as I was pulling out all of the ingredients I couldn't help but think that they'd be even better with a little peanut butter.
Here's what you'll need:
2 C quick cooking oats
2 C all purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 C butter (one stick, room temperature)
1 C granulated sugar
1 C brown sugar
2 large eggs
2 tsp vanilla
1/2 bag peanut butter chips
Here's how to bake 'em:
Preheat your oven to 350.
Combine the oats, flour, baking powder, baking soda and salt in a bowl and set aside.
In a large bowl (or mixer) cream together butter, sugars, eggs, and vanilla until smooth. Beat in flour mixture until combined. Stir in peanut butter chips.
Drop by the spoonful onto an ungreased baking sheet. I found that a medium sized cookie baked much better than a smaller cookie did so I dropped them by heaping spoonfuls :) Bake for around 13 minutes or until golden.
