Cranberry Oatmeal & White Chocolate Chunk Cookies {Amazing}

I haven't been much in the Christmas spirit so far this season and since Christmas is creeping up on me ever so quickly (15 days!), I knew I needed to get my act together. One thing that always puts me in a good mood, holidays or not, is cookies. So while I was perusing the grocery store aisles last week (yes, I peruse the grocery store!) I picked up a few ingredients to make a festive Christmas cookie.

Unfortunately for me, I forgot that I burnt the motor up on my hand mixer over Thanksgiving so I had to mix these bad boys all by hand! Oh well, it was so worth it.


2/3 Cup butter or margarine, softened (almost 2 sticks!)
2/3 Cup brown sugar - I used dark brown sugar but light will work just as well
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
Approx. 2/3 cups dried cranberries - honestly I just pour them in until I think there is enough :)
2/3 cup white chocolate chips or chunks - again, I just pour them in!

You could even add a little cinnamon or vanilla to this recipe and it would be great! 


Preheat your oven to 375*F.

Use an electric mixer to beat the butter and sugar together until light and fluffy; add the eggs and mix well. In a separate bowl, combine oats, flour, baking soda and salt. Add the oats mixture to the butter and sugar mixture a little at a time and mix well. Stir in the dried cranberries and chocolate chunks/chips last.

 Drop the dough by rounded spoonfuls onto an ungreased cookie sheet. Bake for approximately 10 minutes.

These cookies are so darn good! I love cranberries so when I saw the freshly dried cranberries at the grocery store I knew I could make something great with them. I was unsure if my husband would approve of these because of the cranberries, but even Mr. Picky Eater himself love them!

These are without a doubt my new Christmas (and any other time) go to cookies!
